How To Make Bengali-Style Basanti Pulao

Ingredients: Basmati rice, ghee, cashews, raisins, cloves, cinnamon, cardamom and spices.

Wash rice, soak for 30 minutes in water and then drain.

Heat ghee in a pan. Add cashews, raisins, cloves, cinnamon and cardamom.

Saute until golden brown, then add bay leaf and rice.

Stir gently till the rice gets the flavours of spices and ghee.

Add 2 cups of water and salt as per your taste and bring to a boil.

Cover and let it simmer for 15-20 minutes until rice gets cooked.

Fluff rice with a fork, serve hot.

Garnish it with fried raisins and cashews.

Eat it with a side dish like raita or curry.
