How to Make Amritsari Pindi Chole At Home?

Amritsari pindi chole goes well with Amritsari kulcha or naan. Here's an easy recipe for Amritsari pindi chole to make at home.

Ingredients Chickpeas 200 gm Bay leaves 2 Tea bag 1 Cinnamon 1 inch Cloves 3 Green cardamom 2 Black cardamom 2 Salt (According to the taste)

Ingredients for chole masala powder: Red chilli powder 1 tsp Haldi 1/2 tsp Cumin powder 1/2 tsp Coriander powder 1 tsp Garam masala 1 tsp Hing 1/4 tsp Sugar 1 tsp Salt (According to the taste) Amchur powder 1/2 tsp

Ingredients for the curry: Ginger-garlic paste 1/2 tsp Green chillies 4 Fresh coriander leaves (Chopped) Oil 1 tbsp Tomato puree 1 cup Onion Puree 1 cup

Ingredients for the tempering: Green chillies (slit) 4 Oil 1 tbsp Ginger (juliennes) 1/2 inch

Step 1 Add soaked chickpeas, bay leaves, cinnamon, black and green cardamoms, a black tea bag, salt and water in a pressure cooker. Cook it for 4 to 5 whistles.

Step 2 Mix all the ingredients of the homemade chole masala powder and keep aside. After whistles, discard the tea bag and drain the chickpeas.

Step 3 Heat some oil in a heavy-bottomed pan set on medium flame. Now add the onion paste and saute until golden brown. Add ginger-garlic paste and fry it for a few minutes.

Step 4 Pour in the tomato puree and add green chillies. Now, add the chole masala powder and mix everything. 

Step 5 You can add 1/4 th cup of the flavoured water and cook for 3-4 mins.

Step 6 Add the drained chole and mix it well with the masala. Now, add the remaining water to the chole and give it a good stir.

 Step 7 Cook it on a low-medium flame for 8-10 minutes.

Step 8 For the tempering, heat the oil in a small pan. Add green chillies and ginger juliennes and fry for a few seconds.

 Step 9 Pour this tempering over the chole and garnish with fresh coriander leaves.
