How To Make Eggless Pineapple Pastry At Home?

A classic pineapple pastry is loved by all age groups. Here's an easy recipe to make eggless pineapple pastry at home.

Ingredients

01 Flour - 2 cup

02 Baking powder - 2 tsp

03 Butter - 1/2 cup

04 Powdered sugar - 1.5 cup

05 Water - 1/2 cup

06 Yoghurt - 3/4 cup

07 Vanilla essence - 1 tsp

08 Salt - 1/4 tsp

09 Cake tins - 2x9 inch (round/square)

1 Pineapple - 1 cup (finely chopped)

2 Pineapple - 3 tbsp (juice/syrup)

3 Cream (chilled) - 3 cup

4 Sugar - 1/4 cup

5 Cherries and pineapple slices - (for garnishing)

Sift the flour and baking powder and transfer into a mixing bowl. Add the salt, sugar, butter, water and vanilla.

Step 1

Beat the mixture using a wooden spoon or a beater till well blended.

Step 2

Add the yogurt to the cake batter and beat till smooth. The batter looks almost glossy when done. Transfer the batter to the prepared tins.

Bake for about 20-25 minutes at 160 degrees Celsius.

Now, for layering whip the cream with the sugar, till it holds its shape.

Place one sponge on the plate upside down, remove the paper, and spread the chopped pineapple over it in a layer.

Step 6

Spread a layer of cream over this and cover it with the second sponge, upside down. Remove the paper and sprinkle with the juice/syrup.

Step 7

Now, cover neatly with a layer of cream. Cut into desired-sized rectangles and decorate with piped whipped cream.

Step 8

Garnish with the pineapple slice and cherries, chill and serve.
