Greek Yoghurt Parfait

Ingredients: Greek yoghurt, Mixed berries (such as strawberries, blueberries, and raspberries), Granola, Honey

Method: Layer Greek yoghurt, mixed berries, and granola. Drizzle honey on top for sweetness in a bowl. Enjoy this protein-packed parfait that offers a perfect balance of creamy, crunchy, and fruity flavours

Egg and Spinach Breakfast Wrap

Ingredients: Wholemeal tortilla wrap, Eggs, Spinach leaves, Feta cheese (optional), Salt and pepper to taste

Method: Scramble eggs in a pan until cooked through. Add spinach leaves to the pan and sauté until wilted. Season with salt and pepper. Place the egg and spinach mixture onto a wholemeal tortilla wrap. Sprinkle with feta cheese if desired. Roll up the wrap

Quinoa Breakfast Bowl

Ingredients: Cooked quinoa, Sliced avocado, Cherry tomatoes, Cooked chicken breast, Pumpkin seeds, Lemon juice

Method: Combine cooked quinoa, sliced avocado, halved cherry tomatoes, and cooked chicken breast. Sprinkle with pumpkin seeds for an added crunch. Squeeze lemon juice over the bowl for a zesty finish

Cottage Cheese Pancakes

Ingredients: Cottage cheese, Eggs, Oat  flour, Baking powder, Vanilla extract,  Berries for topping

Method: Mix cottage cheese, eggs, oat flour, baking powder, and vanilla extract. Heat a nonstick pan over medium heat and lightly grease with cooking spray. Pour small portions of the batter onto the pan to form pancakes. Cook until bubbles appear on the surface, then flip and cook until golden brown. Serve with fresh berries on top

Smoked Salmon and Avocado Toast

Ingredients: Wholemeal bread slices,  Smoked salmon, Avocado, Lemon juice,  Chilli flakes (optional)

Method: Toast wholemeal bread slices until golden brown. Mash ripe avocado and spread it evenly onto the toast. Top with slices of smoked salmon. Drizzle with fresh lemon juice and sprinkle with chilli flakes if desired

Tofu Scramble

Ingredients: Firm tofu, Olive oil, Chopped vegetables (such as bell peppers, onions, and spinach), Turmeric powder, Garlic powder, Salt and pepper to taste, Fresh herbs for garnish (such as parsley or chives)

Method: Press the tofu to remove excess water, then crumble it into small pieces. Heat olive oil in a pan over medium heat. Add chopped vegetables and sauté. Add tofu and sprinkle with turmeric powder, garlic powder, salt, and pepper. Cook, stirring occasionally, until the tofu is heated through and slightly golden. Garnish with fresh herbs
