Tamarind rice can be prepared in the tangy pulp of tamarind and simmered in jaggery and spices.

To make it, cook rice with lentils (moong dal) and temper it with ghee, black pepper, curry leaves, and cumin seeds.

Prepare a temperament of urad dal, chana dal, mustard seeds, turmeric powder, dry red chilli, and curry leaves. Add cooked rice to the pot and toss it until it turns yellow. Add lemon juice on the top and serve it.
