Mangalore style paneer ghee roast combines the creaminess of paneer with the boldness of ghee and an array of spices. Here's how to prepare this mouthwatering dish.

Ingredients: • 250 grams paneer (cubed) • 2 tablespoons ghee • 1 onion (finely chopped) • 2 tomatoes (pureed) • 1 tablespoon ginger-garlic paste • 1 tablespoon tamarind paste • 1 teaspoon turmeric powder • 2 teaspoons red chili powder • 1 teaspoon coriander powder • 1 teaspoon cumin powder • 1 teaspoon garam masala • Salt to taste • Fresh coriander leaves (for garnish)

Heat ghee in a pan over medium heat. Add the chopped onions and sauté until they turn golden brown.

Add the ginger-garlic paste and sauté for another minute until the raw smell disappears.

Add tomato puree, turmeric powder, red chili powder, coriander powder, cumin powder, and salt.

Cook until the ghee separates from the masala. Add tamarind paste and mix well. Cook for another 2-3 minutes.

Sprinkle garam masala on top and mix gently. Cover and cook for 2-3 minutes on low heat.

Garnish with fresh coriander leaves. Serve hot with roti, naan, or rice.
