Heat oil or butter in a pan. Add finely chopped onions and sauté until golden brown.

Add ginger-garlic paste and cook until fragrant. Add tomato puree and cook until the oil separates.

Add turmeric, red chili powder, coriander powder, and garam masala. Cook the spices for a few minutes. Add cashew paste, mix well.

Add water to achieve desired consistency. Season with salt and a pinch of sugar.

Simmer for 10-15 minutes, stirring occasionally.

Cool and store in the refrigerator or use immediately with your choice of vegetables or meat.
