Easy Mango Cheesecake Recipe

Crush 200g digestive biscuits. Mix with 100g melted butter. Press into a springform pan. Chill in the fridge.

Beat 500g cream cheese until smooth. Add 200g powdered sugar. Mix in 1 tsp vanilla extract.

Fold in 250ml whipped cream. Add 300g mango puree. Mix until well combined.

Pour filling over the crust. Smooth the top. Chill in the fridge for at least 4 hours.

Spread 100g mango puree on top (optional). Garnish with mango slices (optional).

Remove from pan. Slice and enjoy!
