Ingredients For the donuts: All-purpose flour: 550 grams Dry yeast: 7 grams Milk (warm): 175 ml Melted butter: 60 grams Egg: 1 Sugar: 45 grams A pinch of salt Oil to fry For the chocolate filling: Cooking cream: 60 ml Dark chocolate, melted: 120 grams
Heat milk until lukewarm and add the dry yeast, set aside for 5 minutes.
In a large bowl, combine sugar, butter, and salt. Whisk together.
Add the egg and whisk a bit more. Add the yeast and milk mixture and whisk again.
Sift in all-purpose flour and knead the dough until smooth. Place the dough in a greased bowl, cover with a damp cloth, and let it rest for 2 hours.
Once the dough has doubled in size, roll it out to about ½ inch thick on a floured surface.
Cut the dough into desired shapes and transfer to a greased tray. Cover and let rest for 30-45 minutes.
Heat oil and fry the donuts until golden on both sides. Let them cool before filling.
For the filling, heat cream and add melted dark chocolate, mixing until combined. Let it cool.
Fill the donuts with the chocolate mixture using a piping bag. Optionally, dip in castor sugar cinnamon dust or your favorite glaze.
