4 Healthy One-pot Meal Recipes For Monsoon

From masala vegetable khichdi to soya pulao, here are some easy-to-make one-pot meal recipes perfect for the monsoon season.

Masala Vegetable Khichdi

Heat ghee in a pressure cooker, and add whole spices like bay leaf, cardamom, cloves, cinnamon, and jeera. Add ginger-garlic paste, followed by chopped onions and tomatoes. Add chopped veggies like cauliflower, carrots, green peas, and capsicum, and cook until they soften. Now, add rice, turmeric, red chilli powder, salt, and some water. Pressure cook for about five whistles.

Mac & Cheese

Take some macaroni in a bowl, add some water, and microwave it for some time. Drain the water, add milk and shredded cheddar cheese, and stir well. Microwave for another minute until the cheese melts and blends perfectly with the pasta.

Soya Pulao

Soak soy chunks in hot water for some time. Squeeze out the water and marinate the chunks with curd, red chilli, ginger-garlic paste, and coriander powder. Heat oil in a pressure cooker and add whole spices. Add chopped onions and add the marinated soy chunks to it. Add tomatoes, slit green chillies, soaked rice, red chilli powder, coriander powder, garam masala, turmeric, and salt. Pour in some water and pressure cook for two whistles.

Burnt Chilli Garlic Fried Rice

Heat oil in a pan and add chopped garlic and dried red chillies. Add cooked rice and stir-fry with soy sauce, vinegar, and a mix of chopped vegetables like bell peppers and spring onions. Season with salt and pepper and cook until the veggies are tender.
