Delicious Vegetable Cutlet Recipe

 Ingredients    1 tbsp oil    1 tsp ginger paste    1 1/2 tsp finely chopped green chillies    1/2 cup chopped carrot    1/4 cup chopped beetroot    1/3 cup finely chopped French beans    1/4 cup boiled green peas    3 cups boiled and mashed potatoes    1/4 tsp turmeric powder    1/2 tsp chilli powder    1 tsp chaat masala    1/4 cup bread crumbs    2 tbsp finely chopped coriander    Salt as required    Bread crumbs for rolling    Oil for deep frying    To make slurry    1/4 cup plain flour    1/4 cup cornflour    Salt to taste    1/2 cup water

Heat the oil in a deep non-stick, add ginger garlic paste and green chillies and sauté for few seconds.

Add carrots, beetroot, French beans and green peas and cook on high flame for a minute. Remove from the flame, transfer the mixture to a plate and allow it to cool completely.

Add mashed potatoes, turmeric powder, chilli powder, chaat masala, salt, black pepper powder, breadcrumbs and coriander. Mix well to form a patties mixture.

Divide and roll the mixture into 14 equal portions and shape each portion into a 75 mm. flat oval.

Dip each pattie in the prepared slurry and roll in the bread crumbs till they are evenly coated from all the sides.

Heat the oil in a kadhai and deep-fry each patties till it turns golden brown in colour from both the sides. Drain on absorbent paper.

 Serve the cutlets with tomato ketchup or green chutney.
