7 Vegetarian Mexican Dishes You Can Try

Mexican dishes are quite popular in India and are known for their distinct taste. Here are some vegetarian Mexican dishes you can try.

Tacos

Make or buy taco shells. For the filling, saute a mixture of chopped bell peppers, onions, and tomatoes with cumin, chilli powder, and paprika. Add black beans or chickpeas. Now, fill the shells with this mixture and top with shredded lettuce, grated cheese, and a dollop of sour cream or yoghurt.

Bean Burritos

Make or purchase flour tortillas. Mix cooked rice with refried beans (or mashed cooked kidney beans - rajma), sautéed onions, bell peppers, and spices like cumin and coriander. Spread this mixture over the tortillas, sprinkle with cheese, and roll them up.

Mexican Rice

Heat some oil in a pan and saute onions, garlic, and diced tomatoes. Add spices like cumin, paprika, and a pinch of chili powder. Stir in rice and cook for a few minutes before adding vegetable broth or water. Let it simmer until the rice is tender.

Quesadillas

Fill flour tortillas with a mix of shredded cheese, sautéed mushrooms, onions, and bell peppers. You can also add cooked beans. Fold the tortillas in half and cook them on a tawa greased with butter or ghee.

Enchiladas

Prepare or buy corn tortillas. For the filling, use a mixture of sautéed vegetables like bell peppers, onions, and spinach, along with cheese. Roll the tortillas around the filling and place them in a baking dish.

Mexican Corn Salad

Roast or grill corn on the cob until slightly charred. Once cooled, cut the kernels off the cob and mix with chopped tomatoes, onions, and bell peppers. Toss it with a dressing of lime juice, olive oil, salt, and pepper.

Chili Con Carne

In a pot, saute onions, garlic, and bell peppers until soft. Add chopped tomatoes, kidney beans, black beans, corn, and spices such as cumin, chilli powder, and paprika. Simmer until the vegetables are tender.
