Easy Vegan Kaju Katli Recipe

1 cup cashews, 1 cup powdered sugar, 1/4 cup water, 1 tbsp coconut oil, 1/2 tsp cardamom powder, 1 tbsp rose water

Soak cashews in water for 2 hours; drain.

Blend cashews into a fine paste with a bit of water if needed.

Heat coconut oil in a pan over medium heat.

Add cashew paste, and cook for 5 minutes, stirring continuously.

Add powdered sugar and cardamom powder; mix well.

Cook until the mixture thickens and starts to leave the sides of the pan.

Remove from heat; stir in rose water if using.

Transfer mixture to a greased tray; flatten with a spatula.

Let cool completely; cut into diamond-shaped pieces.
