Healthy Roasted Cauliflower Soup Recipe

400g cauliflower 12-15 cashews, soaked 6-8 garlic cloves 1 cup water Salt as per taste Pepper as per taste 2-3 tsp of olive oil

Ingredients

Chop cauliflower into small pieces, and then blanch it in hot water.

Then pan roast it until the cauliflower is charred on all sides.

Let it cool and add it to a blend with soaked cashews and water. Blend into a smooth paste.

Add it back to the same pan, add some more water and adjust the consistency of soup as you like.

Add pepper, salt and let it simmer.

Now add olive oil to a pan and fry the garlic cloves until crisp.

Garnish the soup with the fried garlic cloves and enjoy.
