Mash boiled potatoes with chopped onion, green chilli, ginger-garlic paste, and spices. Make small patties of this mixture and shallow fry in a pan. Serve with curd, tamarind chutney, and green chutney.

Heat oil in a wok, add garlic, sliced onions, and mixed vegetables. Cook them for some time and add boiled noodles, soy sauce, chilli sauce, vinegar, black pepper, and salt. Mix everything well.

Pav Bhaji

Heat butter in a pan and add chopped onions, ginger-garlic paste, and chopped tomatoes. Add mashed boiled potatoes and mixed vegetables. Sprinkle pav bhaji masala, red chilli powder, and salt. Mix well and cook till all blend into a thick gravy. Toast the pav buns with butter on a griddle and serve with bhaji.

Place the papdis on a plate and put a spoonful of boiled potatoes, onions, and tomatoes over each of them. Add tamarind and mint chutneys. Sprinkle chaat masala and sev. Sprinkle chopped coriander leaves and serve.
