Ingredients: • Mixed vegetables (carrots, potatoes, peas, cauliflower, etc.) • 1 onion, chopped • 2 tomatoes, chopped • 1 can coconut milk • 1 tbsp ginger-garlic paste • 2 tbsp curry powder or garam masala • 1 tsp turmeric powder • 1 tsp cumin seeds • Salt and pepper to taste • Fresh coriander for garnish • 1 tbsp oil
Heat oil in a large pot and add cumin seeds and then chopped onions. Saute until golden brown.
Stir in the ginger-garlic paste, curry powder, and turmeric. Cook for about 1-2 minutes.
Toss in your mixed vegetables. Stir well to coat them with the spices.
Pour in the coconut milk and a little water if needed. Cover and cook for 15-20 minutes.
Add salt and pepper to taste. Stir occasionally to prevent sticking at the bottom.
Garnish with fresh coriander and serve hot with rice or naan.
