Heat oil in a pan and sauté onions, ginger, and garlic until golden brown.
Add the chicken pieces and cook until they are browned on all sides.
Next, add the spices, curry leaves, and coconut milk.
Let it simmer for 20-25 minutes until the chicken is cooked through and the flavours are well blended.
