Healthy Pumpkin Pasta
Recipe To Celebrate The Autumn Season
Ingredients
Olive oil - 1.5 tsp Finely chopped garlic - 1.5 tsp Finely chopped onion - 1 medium Cubed pumpkin - 1.5 cups Cherry tomatoes - 8-10 Black pepper powder - 1.5 tsp Salt - to taste Water - 1/3 cup Boiled pasta - 3/4 cup Oregano - 1 tsp Chilli flakes - 1 tsp Basil leaves
Heat olive oil in a pan over medium heat. Add finely chopped garlic and onion, and sauté until they become aromatic and the onions are translucent.
Now, add the cubed pumpkin, cherry tomatoes, black pepper powder, salt, and water to the pan.
Cover and cook until the pumpkin is soft and mushy, stirring occasionally.
Once the vegetables are cooked, blend them into a smooth puree using a blender or food processor.
In the same pan, pour the pumpkin puree, then add the boiled pasta, chili flakes, and oregano.
Mix everything well until the pasta is evenly coated with the sauce.
Garnish with additional chili flakes, oregano, and fresh basil leaves.
