Modak with dry fruits
Ingredients One seedless khajoor/dates heaped bowl Almonds, cashews, and raisins - 1/4 cup each Grated dry coconut - 1/2 cup Ghee - 2 tsp
Dry roast the cashews and almonds. Dry roast the coconut powder. Heat ghee in a pan and add the chopped khajoor. Once it becomes soft, let it cool down. Chop cashews and almonds coarsely. Add all the ingredients to the khajoor and mix it properly. Grease the modak mold and prepare modaks.
Coconut rice
Ingredients Rice - 1 cup Coconut milk - 1.5 cup Water - 1/2 cup Cloves - 3 Cinnamon - 1 Onion - 1 Chillies - 4 Tomato - 1 Oil - 1 tbsp Salt - As per taste
Heat oil in a pressure cooker. Add cloves, cinnamon, cashew nuts, sliced onions, and chopped chilies, and fry till the onion turns transparent. Add tomatoes, and rice and mix all the things properly. Add coconut milk, water, and salt. Close the pressure cooker and cook for some time.
