Grilled eggplant Ingredients Eggplant - 1 Salt - As per taste Vegetable oil - To sprinkle Oregano - As per taste Black pepper - As per taste Coriander leaves - For garnishing
Place the cut slices of eggplant on a tray and sprinkle salt on it. Wipe the water from the surface of the eggplant and set the oven to preheat. Brush the surface with oil. Season the slices of eggplant with black pepper and oregano. Grill the eggplant. Garnish it with coriander before serving.
Smoked brinjal and pumpkin dip with cucumber strips Ingredients Brinjal - 1 Pumpkin cubes - 1 cup Lemon juice - 1 tsp Red chilli flakes - 1 tsp Salt & pepper - As per taste Cucumbers - 2
Apply oil all over the brinjal and roast it over the open flame. Peel off the skin and chop it roughly. Boil the pumpkin in the water. Let it cool down a bit. Combine both brinjal and pumpkin in a mixer and blend till smooth. Take a bowl, pour the mixture, and add lemon juice, salt, pepper, and chilli flakes. Mix well. Serve chilled with cucumber sticks.
Stuffed eggplant boats Ingredients Eggplant - 1 Onion - 1/4 cup Garlic - 1/4 clove Cherry tomato - 1 Spring parsley - 1.5 tsp Bread crumbs - 1/4 cup Feta cheese - 40 gm Olive oil - 1 tsp Salt & pepper - As per taste
Halve eggplant lengthwise. Spoon out the center of the eggplants; keep the shells and eggplant aside. Chop onion, garlic, parsley, and eggplant flesh. Take olive oil in a pan and cook onions with garlic on medium heat. Add the chopped eggplant, salt and pepper. Stir in parsley and chopped tomatoes. Slice feta cheese into cubes and add it to the pan. Add breadcrumbs and mix everything well. Now place the eggplant boats on a baking tray, drizzled with olive oil. Stuff the shells with prepared vegetables and feta. Bake for some time.
