Ingredients: Tofu (cubed) - 200 gm Bell peppers (sliced) - 1 cup Snap peas - 1 cup Carrot (julienned) - 1 Soy sauce (low sodium) - 2 tbsp Sesame oil - 1 tbsp Garlic (minced) - 1 clove Ginger (grated) - 1 tsp
Ingredients: Shrimp (peeled and deveined) - 150 gm Avocado (diced) - 1 Mixed greens - 1 cup Cucumber (sliced) - 1/2 Olive oil - 1 tbsp Lemon juice - 1 tbsp Salt and pepper - As per taste
Heat a pan with olive oil and cook shrimp. In a large bowl, mix shrimp, avocado, mixed greens, and cucumber. Drizzle with lemon juice and season with salt and pepper. Toss gently and serve.
Ingredients: Chickpeas (pre-cooked) - 1 cup Spinach leaves - 2 cups Onion (chopped) - 1 Garlic (minced) - 2 Curry powder - 1 tbsp Coconut milk (light) - 1 cup Olive oil - 1 tbsp Salt and pepper - As per taste
Heat olive oil in a pan, sauté onion and garlic. Add curry powder, mix them well, and cook. Add chickpeas and coconut milk. Stir in spinach and cook. Season with salt and pepper.
