Arbi Curry
Heat a pan with some oil. Add the tomato puree and saute for a few minutes. Add the spices and salt. Let the masala get cooked. Now, chop arbi, fry them, and add these to the gravy. Add water and bring up to a boil. Add seasoning and serve hot.
Arbi Fry
Wash and peel arbi in running water. Pressure cook Arbi for 2 to 3 whistles. Now, slice them in a round shape. Heat oil in a pan, add ajwain and sliced arbi. Now, add spices, crushed black pepper, cumin powder, and green chili. Stir it well and season with salt.
Sukhi Arbi Sabzi
Wash and peel arbi. Slice them in a round shape. Heat some oil in a pan, and add spices and other masala to it. Add sliced arbi and some water to it. Bring it to a boil and let it cook.
Arbi Kofta
Boil the arbi until tender, peel the skin, and mash it. Add besan, red chili powder, turmeric powder, garam masala, and salt, and mix well. Shape the mixture into small balls and deep fry. Heat oil in a pan, add cumin seeds, ginger-garlic paste, chopped onions, tomato puree, red chili powder, turmeric powder, garam masala, salt, and cook. Add water and bring the gravy to a boil. Add the fried arbi koftas.
