Beetroots are rich in nutrients, iron, and calcium and can be added in various ways to your meals. Here are some desi recipes that can be made with beetroot.
Beetroot Halwa
Grate beetroots, and simmer them for some time in a pan. Now, add ghee, milk, and cardamom powder. Add the melted jaggery. Add some cashews. Mix it well and serve hot.
Beetroot Cutlet
Grate the beetroots and squeeze off the water. Blend it with some boiled potatoes and seasonings to form cutlets. Place these cutlets in a greased baking tray. Bake them for some time and serve with your choice of chutneys.
Beetroot Rasam
Beetroots are boiled, steamed, and blended with tamarind to make this beetroot rasam. This puree is cooked with various spices like red chili, cumin, coriander, black pepper, turmeric, and salt.
Beetroot Paratha
Add wheat flour, salt, ghee and knead a dough with warm water. Shred a beetroot in a bowl and added salt, pepper, and red chilli. Make roundels of the dough, roll it out, fill a generous amount of the beetroot filling in the middle, and close the dough. Roll it out again and cook it on a tawa with some ghee.
Beetroot Thoran
Heat some coconut oil in a pan and add mustard seeds, urad dal, chopped green chilli, curry leaves, and asafoetida. Add chopped or grated beetroot. Add salt and mix it well. Add some water, and cook until the water gets evaporated.
