Whisk egg whites with finely chopped onions, tomatoes, green chillies, and coriander in a bowl. Add salt, turmeric, and a pinch of garam masala. Pour the mix into a pan and cook. Serve it with whole-grain toast.

Sauté onions, tomatoes, green peppers, and green chillies in a pan. Add cumin seeds, turmeric, and red chilli powder. Pour in whisked egg whites and stir continuously until the eggs are fully cooked and scrambled. Garnish with fresh coriander and serve hot.

Cook your choice of veggies with a bit of garlic and ginger in a wok or a pan. Once the veggies are tender-crisp, add whisked egg whites to the mix and stir continuously. Season it with soy sauce, sesame oil, and spring onions. Serve it with brown rice or quinoa.
