Mango is one summer fruit that is perfect to beat the summer heat. Here are five mango cake recipes you can try at home.

Mango Suji Cake

Mix sugar, salt, and baking powder with suji. Add oil and mango pulp to the mixture and beat it well. Once suji soaks all the flavours of mango, pour the mix into the greased baking tray. Bake it for some time.

 Mango Cheesecake

Make a coarse crumb of digestive biscuits. Now, add butter to it, mix well, and keep it aside. Take another bowl, and add cream cheese, sugar, and mango puree. Mix it well. Take a small glass tumbler, spoon a bottom layer of biscuit crumb, and gently press it down. Add the mango cheesecake mixture to it.

Eggless Mango Cake

Make mango puree of mango pulp. Combine flour, baking powder, baking soda, and a pinch of salt. Mix oil, butter, sugar, curd, and mango puree. Whisk well. Sift the flour mix through a sieve and add to it. Add mango chunks from the other mango. Preheat the oven and bake for some time.

Malai Mango Cake

Extract mango pulp and make a puree of it. Add milk, sugar, corn starch in a pan and cook. Add malai and stir it. Add some cardamom powder and mango puree. Arrange some unflavoured biscuits in a bowl. Above one layer of the biscuits, put the mango mixture, on top of that add desiccated coconut. Keep repeating this step for two more layers.

Mango Meringue Cake

Separate egg whites from egg yolks. Mix the egg yolks, flour, cornflour, butter, lemon zest, bicarb, baking powder, milk and mango juice. Pour this batter into the buttered tins. Whisk the egg whites with sugar. Spread the meringue on top of the tins. Bake them for some time. Top them with mango puree and mascarpone dressing.
