Quinoa Salad with Chickpeas and Mediterranean Vegetables
Cook quinoa in a bowl. Chop a variety of Mediterranean vegetables such as cherry tomatoes, cucumber, bell peppers, and red onion. Once the quinoa is cooled slightly, toss it with the chopped vegetables, chickpeas, crumbled feta cheese, fresh herbs, and a dressing made from olive oil, lemon juice, salt, and pepper.
Quinoa Upma
Quinoa Substitute semolina with quinoa. Cook it with mustard seeds, curry leaves, onions, and green chillies.
Quinoa and Vegetable Soup
Heat olive oil in a pan and saute diced onions, carrots, and celery until softened. Add minced garlic and vegetable broth. Add cooked quinoa, diced tomatoes, and chopped vegetables such as zucchini, spinach, and green beans. Season it with Italian herbs, salt, and pepper to taste.
Quinoa Khichdi
Replace the rice with quinoa in your regular khichdi recipe. Cook it with lentils, vegetables, and a blend of spices like cumin, turmeric, and garam masala.
Quinoa and Black Bean Burrito Bowls
Cook quinoa and season with a bit of salt and lime juice. Take a pan and heat black beans with cumin, chili powder, and garlic powder. Assemble your burrito bowls by layering the cooked quinoa with the seasoned black beans, diced avocado, salsa, and shredded cheese.
