Heat ghee in a pan and mustard seeds and urad dal. Add onions, curry leaves, cashew nuts, and green chillies. Add sooji and water to it. Keep stirring the mix. Mix well and garnish with grated coconut and coriander leaves.
Heat oil in a kadhai, mustard seeds, ginger, garlic and curry leaves. Add chopped onions and tomatoes. Add the boiled vermicelli. Toss well and serve hot.
Prepare stuffing in a pan by cooking boiled potatoes with salt, turmeric powder, red chilli powder, garam masala powder, and coriander leaves. Add gram flour, red chilli powder, salt, turmeric powder, ajwain, rice flour, and some water in a bowl. Take slices of bread, spread potato filling, and add paneer slices in between. Dip it in gram flour batter and deep fry.
Butter the bread slices and spread mint chutney. Put potatoes, cucumber, onion, capsicum, and tomato slices. Season it with salt and chaat masala. Heat the frying pan and add some butter. Toast the sandwiches on both sides till crispy brown.
Soak the moong dal overnight and grind it with some salt to a flowing batter. Take a pan, grease it with oil, and spread the batter. Dab some ghee on top and flip it over to cook for a few minutes. Serve it with mint chutney.
