Arbi Masala Curry
Prepare onion-tomato gravy with spices like coriander powder, cumin seeds, red chilli powder, garam masala, and amchur powder. Add water and boiled but sliced arbi.
Bengali Arbi Curry
Prepare a blend of tomato, green chilli, and ginger in a blender. Put the curd into the paste and blend again. Fry arbi pieces in a pan. Heat some oil in a pressure cooker, and add ajwain, hing, turmeric powder, coriander powder, and chilli powder. Add tomato mix. Add fried arbi and salt. Mix it well. Cook it for some time.
Arbi Kofta Curry
Boil the arbi, peel it, and mash it. Now combine it with spices of your choice along with some rice flour or besan. Deep fry it. Cook onion-tomato gravy in a pan. Add either curd or milk cream. Add fried arbi to it. Cook it for a while.
