Leftover Rice Burfi a
Blend leftover rice into a smooth paste along with milk, sugar, ghee, and grated coconut. Cook this mix on a low flame until it thickens and begins to pull away from the pan's sides. Add chopped nuts such as almonds or pistachios along with cardamom. Spread out on a tray coated with oil and let it cool. Cut into square or diamond forms once it has set.
Phirni
Blend the leftover rice with milk until smooth. Simmer this mixture in a hot pan with grated coconut, milk, sugar, and cardamom powder.
Kheer
Steam cooked rice in milk with sugar until it thickens and becomes creamy. Add cardamom, nuts, and dried fruits.
