Zucchini is high in water and fibre. Here are some zucchini recipes you can include in your weight loss diet.
Spiralise the zucchini into noodles. Heat some olive oil, add garlic, and saute it well. Now, add zucchini noodles to the pan and cook them until tender. Season it with salt and pepper. Cook it for some time and serve.
Preheat the grilling machine and toss zucchini slices in olive oil. Season it with salt, pepper, and some Italian seasonings.
Thinly slice zucchini. Toss these slices in olive oil. Arrange them in layers on a baking sheet. Sprinkle some salt and bake for some time.
Saute onion and garlic in a pot. Add chopped zucchini and vegetable broth. Bring it to a boil and simmer for a few minutes. Blend until smooth and season with salt and pepper.
Preheat oven and cut zucchini in half lengthwise and scoop out the centre. Mix quinoa and diced tomatoes, and season with salt and pepper. Now, stuff zucchini halves with the mix and top with cheese. Bake for some time.
