Soft Idlis Make a batter of fermented rice and urad dal (black gram). Pour and steam this mix in specialized moulds until they are cooked through. Serve them with sambhar and coconut chutney.
Dhokla Prepare a fermented batter of rice and besan (chickpea flour), seasoned with mustard seeds, curry leaves, and green chilies. Now, steam this batter in a special dish or plate, cut it into pieces, and garnish with fresh coriander leaves and grated coconut.
Flaky Patra Ni Macchi Marinate fish fillets in a mixture of green chutney made from fresh coriander leaves, mint leaves, green chilies, garlic, and coconut. Now, wrap these marinated fish fillets in banana leaves, which impart a subtle flavour, and steam until tender. Enjoy it with steamed rice.
Sweet Kozhukattai Prepare dumpling dough with rice flour. Mix grated coconut and jaggery for filling. Now, fill this mix into dough shaped into small dumplings. Steam until the dough is cooked and becomes soft.
Light Sannas Sannas are steamed rice cakes originating from Goa. They are similar to idlis but are softer and slightly sweet in taste. They are served with spicy curries or coconut-based gravies.
Healthy Handvo Handvo is a savoury cake from Gujarat. Prepare a fermented batter of rice, lentils, and mixed vegetables such as bottled gourd, carrots, and peas. Season it with spices like mustard seeds, cumin seeds, and turmeric. Bake it in a large pan until it develops a crispy crust on the outside while remaining soft and moist inside.
