Bombay Aloo Recipe

Boil Potatoes: Cook 4-5 medium potatoes until tender. Cool, peel, and dice them.

Heat 2 tbsp oil in a pan. Add 1 tsp mustard seeds and 1 tsp cumin seeds, and let them splutter.

Add 1 finely chopped onion, 2 minced garlic cloves, and a 1-inch piece of grated ginger. Sauté until golden.

Stir in 1 tsp turmeric powder, 1 tsp cumin powder, 1 tsp coriander powder, 1 tsp garam masala, and salt to taste.

Add the diced potatoes and mix well to coat with spices. Add 1/2 cup water, cover, and simmer for 10 minutes.

Stir in 1 tbsp lemon juice and garnish with chopped coriander leaves.

Serve hot with naan or rice.
