Ingredients
Sushi rice (prepared with rice vinegar, sugar, and salt) Nori sheets Assorted mushrooms Carrots Soy sauce Mirin (Japanese sweet rice wine) Sugar Sesame oil Avocado Cucumber
Cook sushi rice and season with rice vinegar, sugar, and salt. Let cool.
Sauté thinly sliced mushrooms in oil until tender. Season with soy sauce, mirin, and sugar. Let cool.
Slice avocado, cucumber, and carrots into thin slices.
Place a nori sheet on a clean surface.
Spread a thin layer of rice on the nori, leaving 1 inch at the top uncovered.
Add sautéed mushrooms, avocado, cucumber, and carrot slices.
Roll the nori tightly, using a sushi rolling mat if needed.
Slice the roll into bite-sized pieces.
Serve with soy sauce, pickled ginger, and wasabi.
