Delicious Onion And Mushroom Soup

   Ingredients    2 medium onions    400g mushrooms    5-6 cloves of garlic    50g paneer or feta cheese    Salt & pepper as per taste

Start by caramelising thinly sliced onions.

When they turn transparent, add the mushrooms and garlic.

Once they start to brown, add it to a blender with paneer and blend it into a smooth purée.

Into the same pan add oil, and sauté sliced mushrooms until they turn golden and crispy.

Add the purée to the mushrooms, along with water as per your desired consistency.

Add pepper and salt, let it boil for 2 minutes.

Switch off the flame. Add chopped coriander leaves and serve hot.
