Diabetes-friendly Spinach and Corn Omelette Recipe

 This omelette is a delightful combination of the sweetness of corn, the earthiness of spinach, and the kick from green chilies.

Ingredients

 20g Corn      50g Spinach    2 Eggs    3 Green Chilies    2 Pinches of Salt

Finely chop the spinach and dice the green chilies.

Heat a nonstick pan over medium heat. You can add a small amount of oil or use a nonstick cooking spray to prevent sticking.

Pour the mixture into the heated pan, spreading it evenly to cover the surface, and allow the omelette to cook.

Carefully flip the omelette using a spatula to cook the other side. Cook until both sides are golden brown and the eggs are fully cooked. 

Once the omelette is cooked through, transfer it to a plate. Optionally, you can fold the omelette in half or roll it before serving.

Garnish with additional chopped spinach or a sprinkle of fresh herbs for added flavor and presentation.
