Easy Chicken Chettinad Recipe

Heat oil, add mustard seeds, curry leaves, and chopped onions. Sauté onions until golden brown.

Add ginger-garlic paste, green chilies, and tomatoes, cook until softened.

Dry roast fennel, cumin, black pepper, cloves, cinnamon, and coriander seeds.

Grind roasted spices into a fine powder. Add ground spices to the onion-tomato mixture.

Add chicken pieces, salt, and turmeric, cook until browned.

Pour water, cover, and simmer until chicken is tender.

Garnish with fresh coriander and serve with rice or roti.
