Curry Leaves Rice
Curry leaves rice or karuvepillai rice is a flavourful South Indian recipe that is perfect for a comforting weekday lunch.
Here is its quick and easy recipe.
Roast urad dal, chana dal, black peppercorns, coriander seeds, cumin seeds, dry red chillies and tamarind in a pan of hot oil.
When the ingredients are crisp and fragrant, add one cup of curry leaves. Fry until the curry leaves also turn crisp.
Once the mixture cools down, grind them into a coarse powder.
In another pan, heat oil and add mustards seeds, chana dal, urad dal, and red chillies. Cook until the dal turns golden brown.
Add hing, peanuts and curry leaves to the mixture and cook until the peanuts are crisp.
Cook plain rice separately and keep aside.
Finally mix the rice with the peanut mixture and the curry leaves' powder.
Add dollops of ghee into the rice and serve hot.
