Gluten Free Vegan Potato Curry Recipe

Ingredients: 2 cloves minced garlic, ½ large onion chopped, 1 cup chopped tomatoes, 3 cups chopped potatoes

Ingredients: 1 can coconut milk, 1 tbsp curry powder, 1 tsp turmeric, 1 tsp garam masala, 1 cup spinach, ½ cup green peas

Saute garlic and onion in a non stick pan. Add tomatoes and cook.

Add the potatoes, coconut milk, curry powder, turmeric, and garam masala.

Once potatoes are cooked, add spinach and green peas.

Let it cook. Serve hot with roti or rice.
