Healthy and Quick Vegetable Sandwich Recipe for Breakfast

Ingredients

8 slices of bread    1/2 capsicum    1 cucumber    1 carrot    1 boiled potato    1 onion    100 grams of cheese    4 cheese slices    4 teaspoons of mayonnaise    Salt (to taste)    1/4 teaspoon of black pepper powder     Tomato sauce and green chilli sauce

Begin by slicing the cucumber, onion, and capsicum into thin slices. Grate the carrots and mash the boiled potatoes to prepare your ingredients.

Next, place all these prepared ingredients in a bowl, including the grated cheese, and mix them together. 

Add a generous portion of mayonnaise to the mixture and thoroughly combine all these components. 

Now, take out all the bread slices and set them aside. Heat a pan with a small amount of oil and gently toast the slices.

While toasting, drizzle some tomato sauce, sprinkle a pinch of salt, and a dash of black pepper powder on each slice.

After toasting the bread, arrange the slices on a plate. Spread the prepared vegetable mixture onto one slice and top it with another slice. 

If desired, you can include cheese slices as well. Finally, bake the sandwich in a pan or oven for a few minutes to melt the cheese and heat the sandwich thoroughly.

In just a few minutes, you’ll have a delightful crispy vegetable sandwich. Serve it with tomato or chilli sauce; it pairs well with a hot cup of tea or a glass of milk.
