Healthy Beetroot Soup Recipe for Dinner

Ingredients    1 steam broccoli    60 g low fat paneer/tofu    Spice mix (1 tsp cumin powder, 1/2 tsp coriander powder, 1/4th tsp cardamom powder, 1/2 tsp garam masala, 1/2 tsp kasuri methi)    Salt to taste    2 dry red chillies    1/2 onion chopped    4-5 cloves of garlic minced    1-2 tsp of oil

Chop beetroot, onion, drumsticks and green beans and add to a pressure cooker with some water, garlic cloves and salt.

Boil the vegetables for roughly 4 to 5 whistles. Thereafter, take out the drumsticks and scrape out the pulp from the skin.

Add the drumstick pulp and boiled vegetable to a blender and make a smooth paste.

Add ghee to a pan, followed by jeera and curry leaves. You can also some other raw spices, such as clove and cardamom, if you want.

For the final boost of flavour, add a pinch of pepper and lemon juice and garnish with a handful of coriander leaves. Enjoy!
