This Indian spiced lentil with carrot recipe is a flavourful and nutritious delight. Here's an easy recipe to make this aromatic masoor dal dish.

- 1 cup red masoor dal (lentil), rinsed and drained - 2 medium carrots, peeled and grated - 2 tablespoons vegetable oil - 1 onion, chopped - 2 cloves garlic, minced - 1 teaspoon ground cumin - 1 teaspoon curry powder - 1/2 teaspoon turmeric - 1/2 teaspoon cayenne pepper (optional) - Salt, to taste - 4 cups water - Fresh cilantro, for garnish

In a large pot, heat oil for 1 minute over medium heat.

Add chopped onion in the pot and cook until softened.

Add chopped garlic, cumin, curry powder, turmeric, and cayenne pepper (optional). Cook for 1 minute.

Add masoor dal (lentils), carrots, salt, and water. Boil it.

Reduce the heat and simmer for 20-25 minutes or until lentils are tender.
