Healthy Jowar Vegetable Pulao Recipe

   1 tsp oil    1 cup jowar    1/2 tsp cumin seeds    1/2 tsp mustard seeds    2 tbsp peanuts    2 green chillies, finely chopped    1 tsp ginger, finely chopped    1 sprig curry leaves    1/4 cup carrots, finely chopped    1/4 cup beans, finely chopped    1/4 cup corn, boiled    1/4 cup tomato, finely chopped    Salt, to taste    Pepper, to taste    1 tbsp coriander, finely chopped    Juice from 1 lemon

Ingredients

Soak jowar for 7-8 hours and then pressure cook it for 10-12 whistles. Strain and keep aside.

Heat oil in a pan. Add mustard seeds, cumin seeds, peanuts and cook until crunchy.

Add in ginger, green chillies and cook for a minute.

Next, add in curry leaves, carrot, beans, corn and cook for 2-3 minutes.

Add in the cooked jowar, salt, pepper, coriander and lemon juice.

Mix well and cook for 3-5 minutes. Enjoy!
