Korean carrot salad, or Morkovcha, is a simple and delicious salad instilled with Korean flavours. Here is a simple recipe to make the healthy dish in 15 minutes.
4 medium carrots (finely chopped) 2 cloves garlic, minced 1 tbsp apple cider vinegar (or rice vinegar) 1 tbsp sesame oil 1/2 tsp sugar or honey (optional, for slight sweetness) 1/4 tsp red chilli flakes 1/4 tsp ground coriander Salt and pepper 1 tbsp sesame seeds (roasted) Fresh cilantro or parsley (optional)
Peel carrots into thin, long strips and season it with salt and pepper in a large mixing bowl.
Add the minced garlic and apple cider vinegar to the carrots. Allow the carrots to absorb the tangy flavor.
In a small pan, heat sesame oil over medium heat until warm to enhance its nutty flavour.
Add red chilli flakes, ground coriander, and optional sugar or honey to the warm sesame oil. Pour this seasoned oil over the carrots and mix well.
Add toasted sesame seeds to the salad. Mix everything thoroughly, and let the salad marinate for at least 30 minutes.

Garnish the Korean carrot salad with fresh cilantro or parsley. Serve chilled or at room temperature.
