Healthy South Indian Potato Stew Recipe

Ingredients

Medium-sized potatoes (peeled and diced) - 4 Onion (sliced) - 1 Ginger-garlic paste -1 tsp Turmeric powder - 1/2 tsp Black pepper powder - 1/2 tsp Cinnamon powder - 1/4 tsp Thin coconut milk - 1 cup Thick coconut milk - 1/2 cup Salt - As required Oil - 2 tsp Mustard seeds - 1/2 tsp Curry leaves - As required Fresh coriander leaves - For garnishing

Heat oil in a pan and add mustard seeds, curry leaves, and sliced onions. Saute until the onions turn golden brown.

Add ginger-garlic paste and saute for a minute.

Then add turmeric powder, black pepper powder, and cinnamon powder. Mix well.

Add the diced potatoes and cook for a few minutes. Then add thin coconut milk and salt. Cover and cook until the potatoes are tender.

Now, add the thick coconut milk and simmer for a few more minutes. Adjust the seasoning if needed.

Garnish with fresh coriander leaves and serve hot with appam or rice.
