Healthy Sprouts and Chickpea Sandwich Recipe

1 cup sprouts, blanched    1 cup chickpeas, boiled    3 tbsp greek yogurt    1 tbsp tomato sauce    1 tbsp dijon mustard    Salt, to taste    Pepper, to taste

 Ingredients for the sprouts stuffing

Carrot, thinly sliced    Cucumber, thinly sliced    Bell pepper, thinly sliced    Onion, thinly sliced    Salt, to taste    Pepper, to taste    Juice from 1 small lemon

 Ingredients for the salad

 Bread of your choice    Lettuce, as required    Olive oil, to toast the sandwich

 Other ingredients

Add the blanched sprouts, chickpeas and mash it well. Add other ingredients and mix well. Keep aside.

For the salad, add all the mentioned ingredients and mix well.

Take a bread, top with lettuce and top with sprouts stuffing. 

Add the salad and top with another bread.

Toast it well and enjoy. This can be easily packed as your office lunch.
