Gujarati rava handvo is a quick, healthy and scrumptious dish made with semolina, bottle gourd, beetroot and curd. Take a look at the recipe and try it at home.

Ingredients Sooji - 1/2 cup Lauki (grated) - 1/2 cup Beetroot (grated) - 1/2 cup Dahi - 3/4 cup Fruit salt - 1 tsp Salt (according to taste) Water, if required Oil - 3 tsp Mustard seeds - 1/2 tsp Green chilli - 4

Step 1 Add sooji, beetroot, lauki and curd in a mixing bowl. Mix well and let it rest for 15 minutes.

Step 2 After 15 minutes, add salt and fruit salt and give a final mix. Add water if needed to adjust the consistency.

Step 3 Heat oil in a pan/kadhai and prepare a tadka with mustard seeds and green chillies. Add the batter and cover the lid.

Step 4 On low flame, cook one side till it turns crisp brown. Flip the handvo and cook the other side too.

"

 Step 5 You can also transfer the handvo after it's cooked on one side and repeat the tempering for the other side.

Step 6 After preparing the tadka place the uncooked side of the handvo at the bottom and cook.

Step 7 Do a knife test and if it comes out clean then it is ready to be relished.
