Wash and peel carrots, cutting them into thin sticks. Boil water and let it cool to room temperature.
Add carrots, black mustard seeds, and black salt to the water. Transfer the mixture to a glass or ceramic jar.
Cover the jar with a breathable cloth and secure it. Allow it to ferment in a warm place for 3-4 days.
Shake the jar daily to ensure even fermentation. Strain the liquid, and the carrot kanji is ready to drink.
