Kareena Kapoor's Favourite Paya Soup Recipe

Bollywood’s beloved Kareena Kapoor is not just a superstar but also a certified foodie! One dish that has remained close to her heart since childhood is paya soup, a rich and flavourful mutton broth.

   2 tbsp coriander seeds    2 tbsp black pepper    10 cloves    4 bay leaves    8 garlic cloves    1/2 inch cinnamon stick    1 tsp salt    1 piece ginger    10 cups water    1 cup mutton trotters (paya)

Ingredients for the stock

   3 red onions, pureed    3/4 cup oil    2 tbsp coriander powder    1 tbsp ginger-garlic paste    1 tbsp red chilli powder    1 tbsp salt    1 tsp Kashmiri red chilli powder    1 tsp turmeric powder    1/2 tsp garam masala    Fresh coriander for garnish

Step 1: In a large pressure cooker, combine the coriander seeds, black pepper, cloves, bay leaves, garlic, cinnamon, salt, ginger, water, and paya. Let it cook for 20-25 minutes until the trotters turn soft and tender.

Step 2: While the stock is bubbling away, heat oil in a separate pan and saute pureed onions until golden brown. Toss in the coriander powder, chilli powders, salt, turmeric, garam masala, and ginger-garlic paste. Stir well and let the masala cook until fragrant.

Step 3: Once the stock is ready, strain it and discard the whole spices. Add the tender trotters to the prepared onion masala and cook everything together for 5-10 minutes on medium heat.

Step 4: Pour a little stock into the masala first to loosen it up, then gradually mix in the rest of the stock. Let it come to a gentle boil.

Step 5: Transfer the soup to a bowl, garnish with fresh coriander, and serve it piping hot!
