Lauki Ki Kheer Recipe

Prepare Lauki: Peel and grate 1 medium bottle gourd (lauki).

Cook Lauki: Sauté grated lauki in 1 tbsp ghee until soft.

Boil Milk: Bring 1 liter of milk to a boil in a heavy-bottomed pan.

Add Lauki: Stir in the cooked lauki and simmer for 15-20 minutes, stirring occasionally.

Sweeten: Add 1/2 cup sugar and mix well.

Flavor: Add 1/2 tsp cardamom powder and a pinch of saffron.

Garnish: Add chopped nuts (almonds, pistachios) and cook for another 5 minutes.

Cool: Let it cool, then chill in the refrigerator.

Serve: Serve cold, garnished with more nuts if desired.
