Lauki Ki Kheer Recipe

Prepare Lauki
: Peel and grate 1 medium bottle gourd (lauki).
Cook Lauki
: Sauté grated lauki in 1 tbsp ghee until soft.
Boil Milk
: Bring 1 liter of milk to a boil in a heavy-bottomed pan.
Add Lauki
: Stir in the cooked lauki and simmer for 15-20 minutes, stirring occasionally.
Sweeten
: Add 1/2 cup sugar and mix well.
Flavor
: Add 1/2 tsp cardamom powder and a pinch of saffron.
Garnish
: Add chopped nuts (almonds, pistachios) and cook for another 5 minutes.
Cool
: Let it cool, then chill in the refrigerator.
Serve
: Serve cold, garnished with more nuts if desired.
