Are you a biryani lover? Have you ever tried Madras chicken biryani? It is a flavorful and aromatic rice dish that originated in the southern region of India.
Basmati rice - 2 cups Chicken, pieces - 500 gm Yoghurt - 1 cup Onions, thinly sliced - 2 Garlic, minced - 4 Ginger, grated - 1 inch Turmeric powder - 1 tsp Coriander powder - 1 tsp Cumin powder - 1 tsp Red chilli powder - 1 tsp Garam masala - 1/2 tsp Mint leaves - 1/4 cup Saffron strands - A pinch of Milk - 1/4 cup Oil - 4 tbsp Salt - As per taste
Marinate the chicken with yogurt, ginger-garlic paste, and the mentioned spices.
In a large pot, heat oil and fry the onions until golden brown. Remove half of the fried onions and set aside. Add the marinated chicken to the pot and cook.
In a separate pot, parboil the basmati rice with whole spices. Drain the rice and set aside.
Layer the partially cooked rice over the chicken in the pot. Sprinkle the reserved fried onions, mint leaves, and saffron-infused milk over the rice.
Cover the pot with a lid and cook on low heat for some time. Gently fluff the rice with a fork before serving. Serve hot with raita or a side salad.
